It’s not meant to be eaten hot like pizza — it’s served at room temperature, letting the sauce, the bread and the texture of the bread stand out.

Most places don’t make it because it doesn’t fit the standard pizza model. It takes time, it’s not meant to be rushed, and it’s best done in small batches.
